Ipa 6.5% abv- pours a darker and clear golden color. Has an aroma that is kind of sweet and fruity, but with noticeable hops in the background. Beer has a citrusy grapefruit flavor throughout, with the bittnerness and citrus balancing well. The body is a little more full than a typical ipa, but not too thick where it becomes creamy. Pretty good ipa.
I’m pairing this beer with some cave aged Gruyere cheese. The cheese itself is damn good. Very rich flavor and quite dry. The cheese pairs well with the thicker body of the beer, and while the hop character is a little overpowering to the cheese, the Gruyere’s texture and flavor can still be noticed, with the cheese mellowing out some of the bitterness of the beer
